Pizza Burgers; Zucchini fritters; onion rings; french fries



Pizza Burgers (reminiscent of my school lunch days)

Zucchini fritters
(from my zuchini pancake recipe, but submerged in oil instead of fried in a pan)
3 medium zucchini
half a medium onion
1 egg
salt
pepper
pinch baking power
flour (about 1 cup)

Grate zucchini and salt heavily. Allow to sit for at least 10 minutes (the salt draws out the excess water in the zucchini). Squeeze juices out of the grated zucchini and mix the zucchini with the onion (minced). Add salt, pepper and egg. Stir in a pinch of baking powder and enough flour to make the batter the consistency of pancake batter (the amount depends on the size of the zucchini and how moist they are).
Drop by spoonfuls onto a frypan with or without oil (I prefer with oil!) or deep fry in oil. Serve plain or with sour cream.

Onion rings

Sliced onions, dipped in tempura batter:

Sift:
3/4 c. flour
1/4 c. corn starch
1/2 t. baking powder
1/4 t. baking soda

Stir in:
1 c. water
1 egg, beaten

Beat until frothy. Drop onion rings in batter, and then fry in oil until golden brown on both sides.

Homemade french fries

Slice potatoes and soak in cold water. Drain and dry VERY well. Fry in oil at 325 degrees for about 5 minutes. Drain. Raise temperature of oil to 375 degrees and fry a second time until potatoes are golden brown and crispy.
